Chicken Cacciatore

I prefer doing this recipe with bone in chicken, either a cut up whole chicken or my favorite bone in chicken thighs. When using bone in chicken the simmer time will be longer.

Ingredients:

2lb. Chicken
2 Tbls. Olive Oil
6 cloves garlic chopped
1 med. Onion
12 oz can Chicken broth
1 cup red wine
3 Tbls. Tomato Paste
2 med. Bell Peppers
1 lb. Mushrooms
Salt and pepper
1 tsp. dry Oragano
1 tsp dry Basil

In a large skillet heat your olive oil and add chicken, cook until golden brown, then remove to a dish. Add to the pan onions and garlic and sauté until translucent, then add wine and cook for a few minutes. Put chicken back in the pan add chicken broth, oregano, basil, salt and pepper. If using boneless chicken simmer for 20 minutes, if using bone in chicken simmer for 45 minutes. Add mushrooms and peppers simmer for 15 minutes. Let stand for 10 minutes and serve. Serves 4
