Butcher Shop : VFM Beef Stew
VFM Beef Stew serves 4 to 6

1lb. stew beef cut small
1 onion diced
2 lb. chopped red potatoes
4 stalks celery diced
5 medium sized carrots diced
½ cup red wine
1/8 cup sherry
1 tbls chopped garlic
½ cup ketchup
1 QT beef cooking stock
2 tbls basil
2 tbls oregano
1 tsp thyme
1tbls hot sauce

Sauté' in stewing pot first nine ingredients until meat is brown. Add 5 cups of flour to make a roux in the pot. Continue stirring constantly for 4 minutes until Flour smell dissipates. Add last five ingredients, stir & cover. Continue simmering & stirring occasionally for 1 hour.
